Veggies + Grits


Farm Fresh Veggies and Grits with Sliced Avocado

Prep time: 35 minutes. Servings: 2

Ingredients:

- 1/2 C of ground polenta or grits

- 1 Ripe avocado, sliced thin or mashed depending on preference

- 1 C fresh spinach

- 1/3 C cherry or grape tomatoes

- 1/2 C baby bella mushrooms

- 1 tsp of fresh garlic, minced

- 1/4 C of onion, chopped

- 1 tsp of olive oil

- Salt and pepper to taste


Directions:

1. Make your polenta or grits according to the package (southern tip: use veggie stock instead of water, and nutritional yeast if you like cheesy flavor).

2. Add olive oil to a hot pan.

3. Add your onion and stir about 2 minutes.

4. Add you mushrooms and cook down, you may need to add more olive oil.

5. Add your tomatoes and garlic and stir, allow to cook for another 5 minutes.

6. Add your spinach and stir.

7. Salt and pepper to taste and remove from heat.

8. Season your avocado with salt and pepper to taste and top your bread.

9. Add your fresh farm veggies to your polenta.

10. Enjoy immediately.
